Luke came home from school yesterday “on red” – meaning he behaved so badly that they ran out of colors to assign. Poking. Hitting. Pushing. Being loud in the hall. You name it, Luke has been doing it. Well, except nudity…I think we have finally overcome that.
This morning as we drove to school, I ran down the list of the days do’s and don’ts:
- DO make good choices
- DO kind things
- DO what your teachers asks of you, listen
- DON’T hit. kick. push. whine. tattle. poke. pester. harass. run in the hall. blow on people. lick anyone. sit on your friends. dance on tables.
When I asked him if he liked when his friends did those things to him, he said no, so I tried to explain the Golden Rule. He didn’t really understand. So I tried explaining that say hitting or pushing people made people sad. He kind of nodded. Out of nowhere I blurted out “When we aren’t nice to our friends, it makes Jesus cry.” #toofar
This can only result in 3 endings: #1 he processes the sheer magnitude of those words and will be on purple the rest of the year. #2 Zero f*cks will be given. #3 this is a defining moment where he chooses to be a delinquent / future serial killer. Let’s pray for #1.
By Sunday, I am pretty much out of ideas for supper. If you like seafood, this is an easy one-pot meal.
12 oz. Red Potatoes
5 Parsley Sprigs
2 Ears of Corn
2 Spicy Bratwurst
2 Lobster Tail
4 Tbsp. Old Bay Seasoning (more if desired)
6 Tbsp. Butter
- Quarter potatoes. Mince parsley, both stems and leaves. Halve lemon lengthwise. Cut one half into two wedges and juice other half. Shuck corn cobs and rinse. Rinse lobster tail, sausages, and shrimp and pat dry.
- Heat 1 tsp. olive oil in a large pot over medium heat. Add sausages to hot pot and cook 2-3 minutes on two sides, or until golden brown. Remove from pot and set aside. Sausages will nish cooking in later step (no need to wipe pot clean).
- Add 6 cups water, Old Bay seasoning (reserve a pinch for garnish), 1⁄2 tsp. salt, lemon juice, and potatoes in pot used for searing sausages and bring to a boil. Boil 8 minutes to infuse avors into broth.
- Return sausages to infused broth along with corn and boil 5 minutes. Add lobster tails and boil 3 minutes. Add shrimp and boil an additional minute, or until sausages reach a minimum internal temperature of 160 degrees and shrimp and lobster tail reach a minimum internal temperature of 145 degrees.
- While boil is cooking, add butter to a small pan over medium-low heat. Once melted, there will be a white lm (milk solids) on top. Strain butter through a wire mesh strainer into a heat-resistant bowl and discard milk solids (clarifying helps butter remain liquid over time).
- Drain boil in colander and discard broth. Place colander on platter and set on table. Garnish with remaining Old Bay, parsley, and a squeeze of lemon. Place butter in a dish and enjoy this boil family-style.
